we use red vinegar (AKAZU) to season our sushi rice.  Use of this red vinegar makes the rice

  naturally sweet so we can use less sugar. This special touch makes our sushi

  extremely refreshing.

We offer 3 type of low sodium soy sauce for sushi and sashimi. The house- made soy sauce       infuse with mushroom and kelp.  Second, Nnikiri soy sauce made with 30% of aged

   soy sauce and infuse with kelp. Also, 100% wheat free aged soy sauce (gluten free).
